What is praline

It is a candy with a shiny surface and hard, brittle texture. We can use any nuts of our choice to make pralines like cashews, peanuts, almonds, pecans, and walnuts, or use mixed nuts according to the requirement.

This almond jaggery praline is a sugar-free praline recipe where we used jaggery instead of refined white sugar to make the praline. It is a healthier version of praline as no refined sugar is used here.

Making praline with jaggery is much easier and faster than praline made with white sugar. Because Jaggery is softer than white sugar and melts fast. 

Use good quality jaggery for making praline. The colour of the praline depends on the colour of jaggery used. Dark colour jaggery is good as it has fewer chemical processing as compared to light coloured jaggery.

As the jaggery melts and crystallizes faster we should be very careful and keep stirring the mixture to avoid any burning or sticking at the bottom. When the jaggery becomes thick, quickly transfer it to the greased plate. If the mixture becomes hard will be difficult to spread and result is not satisfied.

Step by step preparation of almond jaggery praline

 How to make jaggery praline

1.Put a frying pan on low heat. Add crushed jaggery, stir it till it strats melting. Now add 1 tbsp water and cook till it melts completely and become thick and frothy. Then add whole almonds and mix well.

2.Immediately transfer this mixture to a greased plate. Let it cool completely.

3. Once cooled down then crush it in a pestle motor to make a coarse powder.

4. Store it in an air tight container at a dry and cool place.

Serving suggestions

Sprinkle some praline on ice creams, cakes, in puddings, kheer or eaten as raw to feel the crunchy caramelized bites.
