Simple Thandai Cookies with Homemade Thandai Masala Powder

Eggless Thandai Cookies made with homemade thandai masala is a Holi special snack recipe. These easy to make healthy cookies are packed with the goodness of whole wheat flour and a combination of flavourful spices.
Add almonds, cashews, pistachio, melon seeds,poppy seeds, peppercorn, small cardamom, saffron in a grinder jar and grind it into a corase powder.
Now transfer to a plate and add dry rose petals and mix well.
Take out 1/3 cup of thandai powder and put it aside.
Your homemade Thandai masala powder is ready.
Prepare the Thandai Cookies:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream butter until it becomes fluffy. Then add jaggery powder and beat again together till the mixture becomes light and fluffy.
Add whole wheat flour, thandai powder, custard powder, milk powder, baking powder, nbaking soda and salt. Mix lightly with spatula or use your hands.
Be careful not to overmix.
Make a soft dough. Place the dough in the refrigerator for at least 30-40 minutes.
After that, make small balls of dough with the help of a measuring spoon. In this way you will get equal size cookies.
Flatten each cookie slightly with your palm and place on the cookie sheet with a gap og 2 inch apart.
Bake in the preheated oven for 18-20 minutes or until the edges of the cookies start turning golden brown.
Remove from the oven and let the cookies cool on the baking sheet for a few seconds before transferring them to a wire rack to cool completely.
Garnishing of Cookies
Once cooled, You can decorate cookies with melted dark chocolate and nuts, keep them them plain as per your choice.
Store the Thandai cookies in an airtight container.

1. Always measure your ingredients using a kitchen scale or measuring cup for a perfect recipe.2. The dough should be chilled for at least 30 minutes before start making the cookies.
