In the realm of hearty soups, few recipes manage to strike a balance between health and flavor as elegantly as the Lauki Carrot Coriander Soup. This vibrant concoction not only tantalizes the taste buds but also nourishes the body with its wholesome ingredients.
Heat physically refined rice bran oil or ghee in a pressure cooker over medium heat. Add chopped onions, garlic, and ginger. Sauté until the onions are translucent and aromatic.
Add chopped Lauki (bottle gourd) and carrots to the pot. Stir well and cook for about 5 minutes until the vegetables start to soften.
Pour in the 1 cup water, put the pressure cooker lid and cook for about 3-4 whistles.
Once the pressure is released, open the lid and allow the soup to cool slightly.
Using an immersion blender or regular blender, puree the soup until smooth. Be careful when blending hot liquids.
Return the pureed soup to the pot and reheat over low heat. If the soup is too thick, you can add more broth or water to reach your desired consistency.
Season the soup with salt, pepper, cumin seeds powder.Adjust the seasoning according to your taste preferences.
Transfer to the serving bowls and garnish with
chopped fresh coriander leaves and some sesame seeds.

1. Cut finely or grate lauki and carrot to cook them fast. You can also cook them in a sauce pan but it takes more time to cook. Pressure cooking make the job easy.
2. To get the best taste use fresh lauki and carrot for the recipe.
